All About a Summary (February 13-

Yes I’m a bit late with the summary.  Work got a little kinda sorta ca-ra-zay.

After the gluttony of the previous foodie weekend and an almost healed foot, it was time to get my butt back in gear.  The runs were short but I wouldn’t call them easy.  With my spikes imparting a newfound sense of confidence, I hit trails that were buried deep in snow.  However, the soft and malleable packing snow soon became a crunchy and irregular surface.  This meant that my legs got a double workout:  the larger muscles from the actual run and the smaller stabilizing muscles from…well…stabilizing.

As much as I wanted to start increasing my distance, I figured that with the uneven footing I’d be inviting a re-injury or worse so I kept my runs short.

My diet has been quite good as well.  I made a batch of a sort of cassoulet in the slow cooker and have been munching on meat and beans at lunch since.  To up the nutrition factor, I add whopping mittfuls of packaged baby spinach and baby kale.

I’ve been able to avoid buying my lunch most days.  When I get tempted to leave my container of cassoulet in the fridge, I remind myself that the stuff I brought is infinitely more healthy than almost anything packaged.  Although I did give in one night and crush a bento box.

Wasn’t feeling like any kind of weight workouts so just kept to the cardio.IMG_0421.JPG

Monday February 13 – Easy 5 km run (32:05 minutes)

Tuesday February 14 – 5 km (32:15 minutes)

Wednesday February 15 – 6 km (42:23 minutes)

Thursday February 16 – rest

Friday February 17 – another rest day…whoops

Saturday February 18 – Elliptical 44:53 minutes

Sunday February 19 – huh apparently I forgot to write anything down

And how about the diet?  Besides that oh so delicious bento box?  I had a spark of inspiration one day and stir fried up some baby bok choy, carrot, and wild caught shrimp with a spicy peach chutney on top of some freekah instead of rice for added protein.img_0424

Another night I split an acorn squash and scooped out the seeds before filling the cavity with chopped apple, a small sprinkle of brown sugar and cinnamon with a small pat of butter.  I then baked the halves at 400 degrees for about an hour.  For the last few minutes, I added some chopped pecans.  Very tasty.  With some slices of steak.IMG_0450.JPG

Now normally breakfast is a very simple affair because, let’s face it, I’m not functioning a peak mental capacity for quite sometime.  But with some leftover roasted baby potatoes in the fridge, it was a simple matter to toss them in a hot pan until hot and crispy.  Then I added a beaten egg and some egg whites which I added to the pan and scrambled up until cooked.  I spread that mess out onto a plate and topped with some left over cheese curds and a drizzle of artisanal ketchup.  It was like breakfast poutine.  Inspired if I do say so myself.

    You’re back on it and yes you have been late with the summaries and no weight training?! I am disappointed in you 🙂 lol.
    I suppose the next post will be the one I nominated you for, or will this one be late as well! jk just giving you shit!

      1. Yes, I am! I figured you have been doing very well in your writing abilities and producing more content as time has progressed 🙂 proud of ya! not to mention, I love when others have to take as much time as I do to do awards! lol
